Breakfast Fluffins

Here is a breakfast recipe - Breakfast Fluffins.  You know, like McMuffins but Fleming style.  Its fast, its easy and so good. 


6 slices of bacon
6 slices of bread (I use whole grain)
Shredded Cheese
6 Eggs
Salt and Pepper

Preheat oven to 400.  Grease 6 muffin wells with butter or spray with PAM. 

Use a 3" inch round cookie cutter to cut 6 rounds of bread.  Put one piece into each muffin well.

Curl a slice of bacon around the outside of each piece of bread, positioning between the bread and the muffin tin. 

Sprinkle a small amount of shredded cheese in the center of each piece of bread.

One at a time, crack an egg, and place one egg on top of each, (be careful not to break the yolk).

Bake for approx. 7 minutes.

Run a knife around the edge of each muffin well and pop the Fluffins out.

Season with salt and pepper.  Serve!
